One Meal in a Lamb & Mash Pie

One Meal in a Lamb & mash PIEThis recipe I created for my family using left over Roasted lamb & gravy, turning it into whole new meal .Like said " One meal in a pie" Lamb & Scrumptious Mash you have ever tasty !!! Old Family Favourite.

500g Roasted lamb,sliced in bit size
500ml gravy
6 to 8 mushroom, sliced
MASHED :

6 med potatoes, peeled & sliced
200gm pumpkin,peeled & sliced
4 to5 med Spinach leaves,cut & washed
2 to 3 cloves garlic,mince
1 cup grated cheddar cheese
salt & freshly ground black pepper
1 tblsp butter
milk
1pkt puff pastry
METHOD :

  • You can do this 2 ways make a family pie /pie dish or individual pie can use a pie maker. If pie dish oven 180*c / 350*f pasties
  • Mix together roast lamb , gravy & mushroom. Put aside
  • Place prepare potatoes ,pumpkin in Saucepan with Lid & season with salt & pepper,place a steamer on top & add the prepare spinach & onion .Cook the spinach about 5 mins rinse under cold water & put aside
  • When potatoes & pumpkin are cooked mashed the potatoes mixture & add the butter , milk , season , cheese & garlic.Fold in spinach & onion.
  • To make the family pie add the puff pastry in a oil pie dish you need about 2 sheets. Bake blind about 10 mins or until light golden colour.
    Add the lamb mixture ,then potatoes mixture on top the lamb.
    Grated cheese to the potatoes mixture & sprinkle paprika on top , bake for 20 to 30 mins or until the meat is warm & cheese has melted
  • To make the individual pie Puff pastry on bottom then lamb,then potatoes mixture. Grated cheese & pastry on top .Let the pie cook the pie for you. Enjoy your fast & easy meal !!!
  • Note: Blind baking is when you cook just the pastry so that when you place the pie mixture into the dish it doesn't go all soggy, it creates that crusty pie texture before the pie contents go into the pastry.
  • How to Blind Bake. Grease the pie dish, add the puff sheets.Place some oven bake paper on the pastry . Then on oven bake paper add dry rice then cook for about 10 minutes When remove from oven remove the rice & paper, now you are really for the filling.

Delicious Home Made Sausage RollsThis recipe is a family traditional, ever celebration My mum cooks her home made Sausage rolls now I cook them for my children & celebrations too, many of my guest ask for this recipe so I love share Classic Recipe with you.

1 kilo sausage mince or chicken mince/ turkey
1 large brown onion
2 medium carrots
1 large sweet potato or pumpkin
2 large celery stick
1 capsicum
1 small broccoli head
1/4 cup cauliflower
6 to 8 mushrooms
2 cup freshly breadcrumbs
2 cloves garlic [optional ]
1 red chill or dash sweet chill sauce [optional ]
dash tomato sauce
1 egg / Canola Cooking spray
1 pkt 6 sheets Puff pastry [ makes 72]
Method : Preheat oven 180*C (350*F) Cooking time 20 mins each tray or until cooked pastry is golden in colour.In the food processor Food Processor blend the bread to make breadcrumbs .[ if I have white bread I add 1/4 cup flax seeds] Place the breadcrumbs in a Large Mixing Bowl, ,now add the minces & put aside . Go back to the food processor add all prepared vegetables, garlic & chill and blend,add to large mixing bowl . Add pepper & salt & tomato sauce .If you have not add the fresh chill add the sweet chill sauce.All the ingredients in the mixing bowl mix well until combine.
Pastry sheets : On the pastry sheets cut using a Paring Knife 2 times horizontal ,so you should have 3 rolls. Place on pastry sheets the sausage roll mixture in the center of each row ,then roll the pastry ,cut each roll into 4 times so should have 4 sausage rolls on each row & 16 sausage rolls each pastry sheet.Spray with cooking spray Baking trays place sausage rolls with the seam down on the tray ,these help to keep them seal when cooking.
Tips: You would have about 250g of sausage roll mixture left , Now you can make some rissoles or meatballs add some chicken mince or Chicken meatloaf > check out Chicken & sundried meat loaf. When I'm entertain I sprinkle with poppy seeds or seam seeds before cooking. As well saved with home made Spice tomato sauce [ I have write this recipe out too] I pack the sausage rolls for there lunch box for school .

180g butter ( preferable unsalted)
200g icing sugar
60g plain flour,sifted
5 large egg whites
1 tsp grated lemon or orange rind
1o0g raspberries or berry of your choice
icing sugar sugar for dusting
METHOD :

  • Heat oven to 200*C / 400*F . Grease then friand silicon moulds ( individual oval baking moulds )
  • Melt the butter & allow to cool.
    Sift the icing sugar & flour into a bowl, & mix in the ground almonds. Lightly beat the egg whites with a fork, then fold them into the dry ingredients. Add the cooled, melted butter & lemon rind, & mix well.
  • Three-quarters fill each mould with the mixture & bake on the middle shelf of the oven for 10 mins. Turn the tray around, and bake for another 5 t0 10 mins, until the tops are golden & spring back to the touch.
  • leave in the tins for 5 mins, then gently unmould onto a wire tray & leave to cool.
    dust the friands with icing sugar to serve, or store them in an airtight container for 3 days.
  • Tips : With the egg yokes freeze in ice cub tray ( use for making pastry or mayonnaise ) If you do not have Friands mould just use muffin tin.

500g chicken mince/ or 500g turkey mince
or 250g chicken/250g turkey mince
1 cup Fresh breadcrumbs
1 eggs1 large onion peeled
1 large carrot peeled
100g mushrooms
1 medium zucchini
1 red peppers remove the seed
1/4 cup sundried tomatoes
2 cloves garlic
1 tablespoon smoked paprika
2 tablespoon tomato chutney
Dash tomato sauce
Dash Worcestershire sauce
1/4 cup fresh basil fresh oregano & parley chopped
freshly ground black pepper & salt
GLAZE : 1/4 cup brown sugar
1/4 cup white vinegar
2 tablespoon tomato sauce
1 tablespoon Worcestershire sauce
2 tablespoon Tomato chutney
Method:
Make your fresh breadcrumbs in Food Processor ,place the breadcrumbs in a bowl. In the food processor blend the sun dried tomatoes Add to the mince, add the onion, carrots, zucchini, mushrooms, red pepper blend all the ingredients in the food processor . Now add the fresh herbs & garlic, smoked paprika add to the bowl. Add the remaining of the ingredients mince, eggs, tomato & Worcestershire sauce, garlic, chutney , salt & pepper. Mix together use your hands roll into loaf put into a loaf tin and put aside
GLAZE : Place all the ingredients in a Deep Fry Pan mix with a Whisk, bring to boil & reduce the glaze by half or until thick. Score the top of the meat loaf with a sharp Chef's Knife & pour the glaze over the meat loaf,
Cooking time :
Place in a hot oven at 180*C (350*F) cook until brown about
1 hr.

Beautiful Banana & Fig Quickbread/Muffins


This healthy recipes is one my all time personal favourites, banana and fig with the honey & orange muffins/ Quickbread is a taste made in heaven and is so full of flavour, this recipe can be dairy free
too !!!!

3 mashed rip bananas [about 1 cup]
6 rip fresh red figs or 1 cup dried figs
2 eggs
2 tablespoon cinnamon
1 1/2 cup milk or orange juice Water down [ juice can over power the figs ]
3 cups self -rising flour
1/4 cup caster sugar
1/4cup honey
1/4 cup flax seeds
1/4 cup sunflower seeds
sunflower seeds sprinkle on top as well
Canola Cooking spray
METHOD :

  • Preheat oven 180*C (350*F)
  • Mash the banana & figs using a Potato masher in a large Mixing Bowl add cinnamon , eggs, milk or buttermilk, honey & vegetable oil .Whisk together all these ingredients.
  • On top of the banana mixture sifted the flour add the flax seeds & sunflower seeds,
    please don't over mix.
    Just fold in the flour using a s Silicone Spatula until mixture is wet .
  • If you think the mixture to dry: hard to fold the flour in then add 1/4 cup of milk in & fold the milk in.
    Pour into a grease loaf tin Sprinkle with sunflower seeds on top & push the seeds into the mixture ( so the seed do not fall off when you turn the loaf out )or muffin 12 cup With the muffin sprinkle with cinnamon sugar.
  • Bake in moderate oven for 1 1/4 hrs .Stand 5 mins before turning onto wire rack to cool Enjoy!
  • TIP: Storage time 3 days Guaranteed the loaf will be eaten be then.
    Good for lunch Box for school Yes you can make this recipes into muffins .

The Potato & Prosciutto Bake

Potatoes & Procscuitto BakeThis Classic Traditional Potato bake just compliments any main meal and with the prosciutto it really jazz’s the recipe up. My guests all ways ask for this recipe
4 to 6 large potatoes
4 slices Prosciutto or bacon
2 shallots
1 med onion peeled, cut
250 ml sour cream
250 ml milk
fresh thyme
2 tablespoon olive oil
Ground black pepper & salt
Grated cheddar cheese
METHOD: Preheat oven 180*C ( 350*F) Slice the potato & place in a oven or microwave dish. Cook in microwave for 30 minutes,put aside to cool.
Heat a fry pan, heat add oil, onion , prosciutto cook until golden.Arrange the potatoes in the dish add the sour cream & milk & thyme. Add crumble prosciutto and shallots, add grater cheese on top. Bake until cheese is golden & the potatoes is cooked

The Best Glazed MeatloafThis recipe is a Classic I have been cooking this for last 20 years, if you what to impress a guy this is the recipe for you. It’s a good family meal that kids enjoy,I hide some vegetables for extra goodness This meat loaf as a intense flavour that kiss your lips,and says “absolutely delicious food on a budget” Serve with my cream Potato & Prosciutto Bake just complements the meal
1 kg Kangaroo mince (kangaroo is 95 % fat free)
250g mince beef / 250g Lame or veal mince
1 cup Fresh breadcrumbs( about 3 t0 4 slices bread ) I like using crust.
1 eggs
1 large onion peeled
1 large carrot peeled 100g mushrooms
1 red peppers remove the seeds
Dash tomato sauce
Dash worcestershire sauce
1 teaspoon cumin powder
1 teaspoon smoked paprika
1 teaspoon curry powder
2 clove garlic, chopped
1 tablespoon Grain mustard
Freshly black pepper & salt
2 tablespoon olive oil
GLAZE : 1/4 cup brown sugar
1/4 cup white vinegar
2 tablespoon tomato sauce
1 tablespoon worcestershire sauce
1 tablespoon grain mustard
1 to 2 red chill seeds remove chopped
METHOD :

Make your fresh breadcrumbs in food processor ,place the breadcrumbs in a bowl. In the food processor add the onion, carrots, mushrooms, red pepper blend. In a hot pan add oil & saute all the ingredients in the food processor . Now add the herbs garlic, curry, cumin, smoked paprika cook until vegetables just soft add to the bowl. Add the remaining of the ingredients mince, eggs, tomato & worcestershire sauce, grain mustard, salt & pepper. Mix together use your hands roll into loaf put into a loaf tin a put aside
GLAZE :
Place all the ingredients in a pot mix with a Paddle, Solid Beechwood spoon, bring to boil & reduce the glaze by half or until thick. Sore the top of the meat loaf with a sharp knife& pour the glaze over the meat loaf.
Place in a hot oven at 180*C (350*F) cook until brown about 1 hr

Spectacular Seafood Lasagne

Spectaclar Seafood lasagnaThis Traditional recipe adds a little twist using spectacular seafood, it enriches the flavours of the whole experience of Lasagna. This is a family favorite! This Lasagna is FULL of vegetables for that extra nourishment.
2tblspn olive oil
2 1/2 cups salmon chowder [ this like a white sauce ]
1 tin tomatoes with juice chopped
2 1/2 cups green prawns , shelled & deveined or frozen prawns
1 cup boneless fish, cut into small pieces or can fish of choice [ salmon]
15 spinach lasagna sheets fresh pasta sheets or dried
fresh basil or dried
fresh dill or dried
fresh ground black pepper & salt
3 cloves garlic
2 tblspn tomato paste
2 med carrots puree /pumpkin
Cheddar Cheese or mozzarella
Parmesan cheese
paprika
METHOD :

  • Heat the oil in a large frying pan add the prawns, garlic & fish , when fish/prawns are cooked put aside.
  • In another saucepan add the juice from the fish/prawns stir in tomato paste & tomatoes & Carrot / pumpkin puree season to taste,cover & cook over low heat for about 5 minutes. Add herbs and stir with a spoon Flat End Spoon Beechwood.Then put aside to cool
  • Spoon 1/3 of the salmon chowder into the bottom of a 5cm (2in) deep casserole dish. Arrange a single layer of lasagna sheets on top the chowder, now arrange a single layer of fish/ prawns mixture , then the tomato sauces then chowder sauces , grated cheddar or mozzarella and Parmesan cheese. Repeat these steps until all prepared produce is gone. Last layer should consist of Lasagna sheets, Chowder sauce, Cheese and paprika in that order.
  • Bake in a moderate oven of 180 degree's ( 350*F) for about 40 minutes or until lasagna sheets are soft and cheese is golden. Enjoy!!!

Divine Creamy Salmon Chowder

This Traditional Chowder has been given a unique flavour by adding Salmon which is the wonderfully flavoursome and adds a new dimension to the chowder. This is a great way to get fish into the children diet which is very important . Again I will change this chowder into a Seafood Lasagna...watch out for that recipe !!!

1 x330gm salmon fillet
30g butter or dash vegetable oil
3 med potatoes
1 brown onion
1/2 small cauliflower head
2 leeks
2 zucchinis
1 celery stick,sliced
3corn cob, cooked & remove kernels
2 cups milk , 500ml
2ooml lite sour cream
1/2 cup fresh parsley
freshly ground pepper & salt
fish stock/ we making use the white fish
Method:

  • Place fish & onion , sprig of parsley, salt & pepper in a large Frying Pan - large, cover with water & bring to boil. Reduce the heat & simmer for 5 minutes or until the fish flakes from the water, Reserving 2 cup fish stock using two forks , flakes the fish & if it had bones remove them.
  • Cook the potatoes, cauliflower, leeks, zucchinis, celery in a large pot fish stock & onion milk. When the vegetables are cooked add cream, parsley season to tasty & cool for 10 mins Blend use a Stick Hand Blender, Blend until smooth.Add the flaked fish ,corn & cream to soup.
  • TIP : If you thing you can't afforded this fish buy a frozen fish. But I pay only $8.00 for 1 fresh fillet of fish & remember you are make 2 night meals so that $4.00 each night meal !

Easy Banana & Oats with Mallows Cookies coated Cinnamon Sugar

Quick & easy Banana & Oats Cookies for hungry kids !!!! The cinnamon sugar on top just make the cookies extra scrumptious. This cookies well go fast they are absolutely delicious irresistible cookies !!

1 1/2cup S.R Flour
200 g butter
1 cup caster sugar
1 1/2 cup rolled oats
1cup Banana mashed ( 2 to 3 ripe )
100g min mallows
1 eggs
2 tblsp cinnamon
1/4 teaspoon nutmeg
1 teaspoon baking powder
Method : makes 30 cookies

  • Get your Stand Mixer to started Cream butter & sugar beat until sugar has dissolve add eggs one at time .
    Add the mashed banana & spices beat until creamy.
    Fold in oats , flour & min mallows & baking powder .
  • Rolled the cookie mixture into a ball .
    If the cookies mixture is to wet add 1/2 cup of flour.
  • Rolled the cookies into cinnamon sugar.
    Spare the cooking tray & place the cookies on the tray.
  • baked on 190*C / 380*F for 15 mins.
  • TIP : Cinnamon sugar 1/2 cup caster sugar & 1tblsp cinnamon sugar

Sweet Pineapple Hummingbird Quickbread/muffins

This Classic Recipe Sweet Pineapple and Banana Bread is tasty and scrumptious and all the flavours just compliment each other.
This quick loaf Tastes great toasted for breakfast and packed in the kids lunch box for school.
 1 tin 432 g pineapple pieces or crushed keep the juice of can
2oo ml pineapple juice, from can
1 1/2 cup orange juice
3 rip mashed banana [about one cup
1/2 cup grated carrots
2 tablespoon cinnamon
1/2 teaspoon All spice
2 tablespoon vegetable oil
3 cup self-raise flour
1/2 cup caster sugar
1/4 cup flax seeds
2 eggs
sunflower seeds sprinkle on top
Canola Cooking spray

Irresistible Apple & Butterscotch Waffles

1/4 cup firmly packed brown sugar
5 med apples, grated or pears ,banana
3 cup milk or buttermilk
1 egg
1 tblsp vegetable oil
2 teaspoon vanilla essence
3 cup self- raise flour,sifted
1/2 teaspoon baking powder
dust icing sugar
BUTTERSCOTCH SAUCE :

500ml cream
1/4 cup brown sugar
2tblsp butter
Makes : 12 waffles
  • METHOD : In a large bowl ,beat together the sugar,apply purees, milk,egg margarine, and vanilla. Add the flour,baking powder, & spice. Mix until completely incorporated.
  • Pour the mixture into waffles maker , cook. Enjoy !!!
  • Butterscotch sauce :Combine all ingredients in a sauce , bring to boil & reduce Until thickens.
  • TIP: this recipes is nice with pineapple replace the apple . As well can make it into a doughnuts , Pour the batter into a gallon- plastic bag ( or pastry if you have one ) & cut the bottom tip off of one side of the bag. Squeeze the batter through , into the doughnut mold

375g Dark chocolate
2 tablespoon instant espresso coffee
powder or granules or ecco( free caffeine)
160g self raising flour flour
160g plain flour
1/2 cup dark cocoa powder
2 tablespoon oil
1/2 teaspoon bicarbonate of soda
1 cup caster sugar
4 eggs
1 cup buttermilk or 1 cup cream
2 teaspoon vanilla essence
1 pkt blueberries or whichever berries are in season
serve with cream

Chocolate Ganache:

50g dark Chocolate, chopped
125ml cream ( 1/2 cup)
20g unsalted butter
METHOD :

Preheat the oven to warm 160'C,spray with cooking oil a deep 9 by 2 Inch Round Pan line the base with baking paper.
Place in a saucepan the butter, & buttermilk ( or cream) coffee powder, then remove the saucepan off the heat add the chocolate & stir until Chocolate Ganache melted. Allow to cool then add the beaten eggs & vanilla essence, stir until combine, Please don't over mix. In a another bowl sift the flours, cocoa and bicarbonate of soda into a large bowl Stir in the sugar and make a well in the center.Gradually stir in the melted chocolate mixture using a large mental spoon, slowly stir to incorporating the dry ingredients.
Pour the mixture into the tin . Blueberries thoroughly rinse & dry, using paper towels Drop the blueberries on top of the cake mixture. Bake for 1 3/4 hrs. Test the centre with a skewer - the skewer may appear just slightly wet. Remove the cake from oven unless the centre looks raw, if the cake needs a little longer, give it an extra 5-10 mins. LEAVE the cake in the tin until completely cold, then turn out & wrap in plastic
Chocolate Ganache:
Place the cream & butter into aWare Universal 8 Cup Double Boiler Fits 2 to 4 Quart Sauce Pans saucepan & slowly bring to boil remove from heat. Add the chocolate & stir until the chocolate has melted, Allow to cool slightly, then pour over the cake, place in the refrigerate. Serve with whipped cream & blueberries on top.
STORAGE TIME :
Keep in the fridge in a airtight container for up to 2 weeks . Can be frozen for up to 2 mths
