Mediterranean Roasted Vegetables

This Dish is a classic combination of flavors from the Mediterranean.
Balsamic vinegar just finishes & adding different demesne to the dish.Complements the Mediterranean Roasted Lamb.

Mum Home Recipes
680g Small firm potatoes
680g pumpkin or sweet potatoes
2 red onions,cut into chunks
4 Rome tomatoes
25g butter
2 tblsp olive oil
8 garlic cloves,unpeeled
2 tblsp chopped rosemary
salt & freshly ground black pepper
2 tblsp balsamic vinegar
serves 4

  • METHOD : Preheat the oven to 230*C /450*F. Using Cutting Board & chef knive to prepare the vegetables, Peel & quarter the potatoes & pumpkin, rinse them well & pat thoroughly dry on kitchen paper.
    Place the butter & oil in a Rectangular Roaster tray& place in the oven to heat.
  • When the butter has melted & is foaming , add the potatoes ,pumpkin ,red onions ,garlic & rosemary.Toss well then spread out in the tray.

Cheesy & Poppy seeds Quickbread / Muffins

This Classic Recipe savoury Cheesy & Poppy seeds Quick bread is so tasty and scrumptious and all the flavours just compliment each other.
This quick loaf "Tastes great "toasted for breakfast & packed in the kids lunch box for school.

Enriches with goodness in this recipe. Great dipping in my salmon chowder!


1 cup zucchini grated
1 cup carrot grated
1/2 cup ricotta cheese
2 eggs
3 cup milk
1 teaspoon smoked paprika
1 teaspoon cumin ground
3 cup self-raise flour
1/2 cup caster sugar
1/4 cup poppy seeds
METHOD:
  • In a large Mixing Bowl add herbs & spice , eggs, milk or buttermilk, ricotta & vegetable oil .Whisk together all these ingredients. On top of the ricotta mixture sifted the flour add the poppy seeds, carrot & cheese please don't over mix. Just fold in the flour using a s Silicone Spatula until mixture is wet .If you think the mixture to dry: hard to fold the flour in then add 1/4 cup of milk in & fold the milk in.
  • Pour into a grease loaf tin Sprinkle with poppy seeds or muffin 12 cup Bake in moderate 180*C ( 350*F) oven for 1 1/4 hrs .Stand 5 mins before turning onto wire rack to cool Enjoy!
    TIP: Storage time 3 days Guaranteed the loaf will be eaten be then.

Banana & Cinnamon Quickbread Healthy but Nice

This healthy Quick and easy recipe can be Made into muffins or Quick bread .This cinnamon and banana loaf tasty great when cut thick slice's then toasted for breakfast. As well my children love take to school in there lunch box. "Guaranteed they eat the banana loaf or muffins
"Baked banana loaf to say " thank-you "to some one special I love a good recipe.
So watch out for all Quick bread like Banana and fig , Orange Banana ,

Humming Bird ,Cheese and poppy seeds and much more Quick breads !!


3 ripe banana ,mashed
[about 1 cup]
2 eggs

2 tablespoon cinnamon

1 1/2 cup milk or buttermilk

2 tablespoons vegetable oil

3 cup self-raising flour, sift

1/2 cup caster sugar

1/4 cup flax seeds

sunflower seeds
METHOD: Mash the banana using a Potato masher in a large Mixing Bowl add cinnamon , eggs, milk or buttermilk & vegetable oil .
Whisk
together all these ingredients.
On top of the banana mixture sifted the flour add the flax seeds, please don't over mix.
Just fold in the flour using a s Silicone Spatula until mixture is wet .If you think the mixture to dry: hard to fold the flour in then add 1/4 cup of milk in & fold the milk in.

Creamy Pumpkin Pasta bake with a twist

Bacon & Pumpkin Pasta BakeThis recipe I created for my family using left over pumpkin soup turning it into sauce to cover the pasta, coating it with a full rich rustic flavour.
The kids can't see all the vegetables in the sauce! Great? I think so!
My kids eat it all up without any complaints.

500ml pumpkin soup

250g ricotta cheese or can chick peas pureed

300g bacon - diced

2 tablespoon olive oil

3 shallots sliced

1/4 cup fresh basil

freshly ground pepper & salt

500g Spirals Pasta

Topping:

sprinkle Parmesan Cheese

1 cup cheddar cheese

freshly ground pepper & salt

2 cups fresh breadcrumbs

2 tablespoons butter

Sprinkle smoked paprika
Method:

  1. Cook the pasta as directed on the packet.
    In a saucepan heat oil add dice bacon cook until golden brown place in ovenproof dish, add Pumpkin soup, ricotta (or puree`d Chick peas), shallots, basil & season with salt & pepper and stir till combined, Fold through the prepared pasta.
  2. Topping - Put all ingredients into a bowl except Parmesan & paprika, Rub the butter through to reassemble breadcrumbs, place over pasta Classic Cheese Grater sprinkle over with Parmesan & paprika
    Place on in oven on 180'C cook for a 1/2 hour or until top is golden brown & heated through.
  3. Tip - The chick peas give the sauce extra creamy tasty with extra goodness & less fat too, just replace with the ricotta.

2 1/2 cups Self-raising flour
250 g unsalted butter or margarine
1 cup cater sugar
4 eggs
1 cup sour cream or vanilla yogurt
2 teaspoon vanilla essence
1 cup walnuts or hazelnuts
1/4 cup almond meal
1/2 cup soft brown sugar, firmly packed
3 teaspoons ground cinnamon
Method :

  • Preheat oven 18o*C / 360*F
  • Grease cake tin Paderno World Cuisine 8.5 Inch Tin Square Cake Mold
  • Place flour in food process bowl, add butter & caster sugar.
    Using pulse action,process for 20 seconds or until mixture is fine & crumbly.
    Add the eggs cream or yogurt & essences to bowl,process for ten seconds or until the mixture is smooth.
  • Combine nuts brown sugar & cinnamon in a Mixing Bowls
    Spoon half the cake mixture into the prepared tin: smooth surface.
    Arrange the pears on top of cake mixture & sprinkle with half the nut & sugar mixture on top of the pears
  • Bake in oven ! hr or until skewer comes out clean.
  • Served with butterscotch sauce & vanilla ice cream or cinnamon cream ( add 1/2 teaspoon cinnamon to whipped cream ) or dusted with icing sugar . Enjoy !!!!

Sticky Sesame Chicken

Preparation time : 20 mins
Cooking time : 1 hour

1 or 2 No 1o chicken
2 tsp ginger
1/4 cup soy sauce
1/4 cup hoisin sauce
1/4 cup honey
2 tsp sesame oil
1/2 cup water
6 garlic chives
1 chill optional
1/4 cup sesames sprinkle on top
Method :


  • Preheat oven at 200*C / 400*F Place chicken breast down in a baking tray ,press down on the backbone & break the backbone in three place , so the chicken is flat. Put the chicken, skin-side up , in the dish.
  • Put the ginger, soy,hoisin , honey , chill , chives & sesame oil in a blow, whisk well with a fork, then spoon over chicken.
  • Sprinkle the sesames over the chicken , don't forget the legs & wings with the sesames.Pour water around chickens, cover with foil & bake for 45 minutes. Remove foil & cook for 15 minutes.

  • Cut chicken into serving sized pieces & serve with gravy or not ?

Big Slab of Chocolate Mud Cake

5oogbutter
1/2 cups boiling water
600g dark chocolate broken into pieces
4 cups caster sugar
1 cup cocoa powder
2 tablespoon oil
5 tablespoon instant espresso coffee or granule or ecco (free caffeine)
1 teaspoon bicarbonate of soda
2 cups plain flour
1 cup self-raising flour
6 eggs
5 teaspoon vanilla essence
canola cooking spray
Chocolate Ganache :

150ml thicken cream
30g unsalted butter
500g Cooking chocolate
METHOD:
Preheat oven on 150*C (300*F), spray with cooking oil on bake tray: Roasting tray or slab cake tray about 38cm wide and 35 cm( 15 inch x1o inch) deep with sufficient depth 11"-12.5"-14.5" STAINLESS STEEL BAKING TRAY 3-PIECE SET
Need a deep bowl ( bowl about 38cm wide & 42cm deep SignatureSorrento10-Inch 120-Ounce Large Mixing Bowl, Tuscan Blue
Place in saucepan nonstick double boiler Double Balloon Whisk until then chocolate & butter has melted. In a other bowl sift the flours, cocoa, coffee and bicarbonate of soda into a large bowl. Stir in the sugar & make a well in the center. Add the combine eggs & vanilla essence, using a large metal spoon, slowly stir to incorporate the dry ingredients. Gradually stir in the melted chocolate mixture.
Pour the mixture into the tin & bake for 1 3/4 hrs. Test the centre with a skewer - the skewer may appear just slightly wet. Remove the cake from oven unless the centre looks uncooked, if the cake needs a little longer, give it an extra 5-10 mins. LEAVE the cake in the tin until completely cold, then turn out.
Chocolate Ganache:
Place the cream & butter into a saucepan & slowly bring to boil remove from heat. Add the chocolate & stir until the chocolate has melted, Allow to cool slightly, then pour over the cake, place in the refrigerate.
STORAGE TIME : Keep in the fridge in a airtight container for up to 2 weeks .
TIP: Can be frozen for up to 2 mth

I have made some little changes over the years ,but Germany's know there cabbage .

1/4 small cabbage, finely shredded
1 med carrots, grated
1 stick celery, finely chopped
1 small green capsicum, finely chopped
1 grated onion
1 green apply, peeled & sliced
1/2 cup white wine vinegar
2 tbsp brown sugar
2 tbsp vegetable oil
1/4 cup cold water
1/4 celery seed
2 tblsp mayonnaise
2 tblsp sour cream
dash paprika
salt & pepper
method :

  • Add Peeled apple ,green pepper & onion & season with salt & pepper. Set aside.
  • Place vinegar, brown sugar , oil water celery seed in a saucepan. Cook 5 minutes over medium heat.
  • Pour Marinade over cabbage , toss until evenly coated. Add remaining ingredients & mix again. season well.
  • Marinate 3 hrs in refrigerator befor serving.
  • Tips: I add broccoli chopped very finely & baby spinach . Try my home made mayonnaise

Moist Traditional Roast Chicken

Best Traditional Roast ChickenThis recipe is how to cook the Most Tender Delicious Roast Chicken, and then turn it into an entirely different meal the following night & the next night too, So I'm cooking for three night meals here, good for all the busy working mums out there. How? ...Let me show you.

1.5 kg whole chicken
smoked paprika
fresh thyme leaves
freshly ground black pepper & salt
2 bay leaves
olive oil
6 to 8 piece of pumpkin
6 to 8 medium potatoes
Creamy Roasted Pumpkin Soup
850g(1lb 12 oz) butternut pumpkin peeled & chopped
2 medium potatoes peeled & chopped
1 medium brown onion,peeled & chopped
200g sweet potato peeled chopped
1 med carrots peeled & chopped
250g (8oz) Roma tomatoes halved length ways
2 Tablespoons olive oil
1 clove garlic, chopped
1 tablespoon chopped oregano

METHOD :
Preheat oven to 180'C (365'F) You need 2 baking tray

  • " STAINLESS STEEL BAKING TRAY 3-PIECE SET
    The first tray you need a large cooling rack
    The chicken needs to be thoroughly rinsed & dry, using paper towels. Place the chicken on the cool rack Sprinkle with paprika & season with salt, pepper & thyme leaves, drizzle with olive oil & rub all the oil & season into the chicken skin. Prepared pumpkin & potatoes season with salt, pepper & paprika & drizzle with olive oil. Place the vegetables around the chicken add a 1 cup of water down side of the
    tray trying not to wet the chicken or the vegetables.
    Place in oven at 180'C for 1 & 1/2 or until golden brown.
    Note :
    When you cut up the chicken, place the chicken cages and bones into a pot to make a chicken stock, water, bay leaves, thyme, cut 1 onion with the skin on

    Roast tray
    2 :Preheat the oven to moderately hot 190'C (375'F/ Gas Put the tomatoes, cut-side-up,in a roasting tin with pumpkin, sweet potato, carrot & onion, season with oregano salt & pepper & smoked paprika, drizzle with olive oil and bake for 1 hour or until golden . When this tray is cooked put the cooked vegetables in a pot. When the chicken stock is cooked add 5 cups (1.2litres) of your remade chicken stock & the vegetables in a pot and place in the fridge. Well done you have cooked 3/4 of next night dinner !!!
    TIP : With any Roasted Meat; chicken, lamb and even pork, you can cook on a cool rack in a baking tray using this method. Pour about 1 cup of water then place in a oven, just make sure you keep topping up the water in the bottom of the tray. This keep the meat moist (so the meat does not dry out) These juices also makes the best gravy. Enjoy the Gravy!!!

1 tblsp vegetable oil
1 cup dark chocolate chips
1 cup white chocolate chips
1 1/2 cup self-raising flour
METHOD : makes about 20 large cookies

  • Per heat oven 150*C / 300 *F And grease the Baking trays
  • Cream butter & sugar & beat in the egg add oil. Thoroughly blend in the flour & cocoa.
  • Fold in dark & white choc / chips .
  • Shape into balls & flatten onto baking tray .
  • 18" High Tray Divider Oragnizer
  • Nonstick silicone baking mates these tray make life easy to cook on & easy to remove the cookies & easy to clean . You know after a will the old trays get rustic with the silicone baking trays don't happen.
  • Tips : Here is my recipes if you have to make a big batch for kids party or school cake store.
    makes about 100 cookies
    625 g butter
    1 cup caster sugar
    1 cup brown sugar
    4 eggs
    5 to 6 cups self-raising flour
    1/2 cup cocoa
    2 tblsp vegetable oil
    2 to 3 cups chocolate chips ( If kids party I put 3 cups choc /chips )
    Some method as above , See if the mixture to wet add 1/2 cup flour until you can roll the mixture into a ball.
