Fast & Easy Christmas Fruit Loaf

This is a very special & delicious recipe for a Christmas Fruit Loaf or Muffins.
The dried fruit is mixed with a secret ingredients that just enhance & enrich & highlights the Christmas loaf . The Secret is the MonaVie Juice !!
Just give the Christmas loaf so much depth & flavour & dark in colour, so in total you have about 24 fruits .

teachers, they could stop thanking me when I pick up my boys...Keep say how nice & yummy, they all eat this big loaf was gone in minutes.

1 cup sultans
1/2 cup dates
1 x 450g can pears & juice
1/2 cup sunflower seeds
1 1/2 cup pumpkin seed
1/4 cup chocolate chip
1 cup brown sugar
1/4 cup hazelnut meal
2 tablespoon mixed spice
1/4 cup MonaVie Juice
2 tblsp Cocoa powder
2 eggs, whisk
1 1/2 cup water
125g butter
3 cup self-raising flour
Topping:
Dried cranberry's
1 teaspoon mixed spice
1 tablsp castor sugar
Method :
  • Preheat oven 180*C (350*F) In a large saucepan add , sultans . dates, sugar, butter, MonaVie Juice & water, juice from the can pears & cocoa powder . Stir using a Silicone Spatula once or twice until butter has melted & sugar has dissolved ( about 5 to 8 mins ) Allow to cool slightly Whisk eggs , mixture until well combine .
  • In a large Mixing Bowl .together the following ingredients.
    Sifted flour mixed spice , hazelnut, pumpkin & sunflower seeds & chocolate chip.
  • Add the wet mixture to the flour ,mix until mixture is combine .
    Cut half of the tin of pear so going into the loaf mixture . Fold the pears into the loaf mixture.
    The other half of the pears is to go on top of the loaf ( these pears cut long ways in length.)
  • Pour into a grease large loaf tin Arrange the pears on to the loaf sprinkle dried cranberry or sultans , now sprinkle some hazelnut meal & push the hazelnut & cranberry into the mixture. ( so the do not fall off when you turn the loaf out ) Sprinkle with mixed spice sugar.
    Or muffin 12 cup With the muffin sprinkle with mixed spice sugar.
  • Bake in moderate oven for 1 1/4 hrs .Stand 5 mins before turning onto wire rack to cool Enjoy!
  • TIP: Storage time 3 days Guaranteed the loaf will be eaten be then.
    Good for lunch Box for school Yes you can make this recipes into muffins .
  • Note: This Christmas Fruit Loaf can served warm with custard or brandy custard .

Nigella Christmas Kitchen Episode 2 13th December Part 1 Of

Nigella Christmas Kitchen Episode 1 6th December Part 3 Of 3

2 1/2 cup self-raising flour, sifted
1/2 cup chopped dried apricots
1/2 cup chopped dates or sultans
140g dried cranberries/ 10g cranberries topped cake
150g Almond Kernels
1/4 cup hazelnut meal
2 orange rind & juice
2 tblsp good cocoa powder
2 teaspoons mixed spice
1 cup dark brown sugar
1/2 cup vegetable oil
3 eggs
400g crushed pineapple in syrup
or natural juice
1/2 cup drained pineapple juice
Topping :

1/2 cup water/ oranges juice, the rind orange
1/2 cup castor sugar
1 cinnamon stick
150g Almonds
Method :
  1. Preheat oven to 180*C or 160*C fan. Grease & line base of a 22cm springform pan with non-stick baking paper. Large sauce pan add dried fruit , nuts , rind/ juice , cinnamon , sugar , oil, juice pineapple & cocoa .
  2. Simmer 5 minutes. Then take off heat allow to cool.
    Whisk together eggs add to wet ingredients . Add to dry ingredients with pineapple, mixing with a spatula until just combine.
  3. Fill prepared pan,.Bake for 1 hr & 15- 20 mins , until a skewer inserted come out clan. Cool on a wire rack.
  4. To make Topping : Combine water & orange juice to make up 1/2 cup total & sugar & cinnamon stick in a small sauce pan. Stir on low heat for 1-2 mins , until sugar dissolves. Increase heat to high. Boil, without stirring, for 5 to 8 mins, until from pale golden caramel. Sprinkle the almonds over the top of cake. Pour caramel over almonds, allowing caramel to drip down side of cake.

Summer Chicken & Mango Package

This Recipe Is amazing taste of summer wrap up in pastry package .
The sweet mango & pecan nuts & the marinade chicken wrap up in a flaky pastry when you cut into the pastry & open the package you just know that your taste buds are going to love this Summer Chicken & Mango Package .
I made this Recipe when I was working at Avoca Beach Restaurant ,was one of the favorite meal at the restaurant .
125gm Chicken thighs diced
125gm Chicken breast diced
6 shallots, cut
2 ripe mango , peeled an diced or
1 tin Mango
80gm dice pecan nuts
Sweet chill sauce

2 tblp cornflour
filo pastry or you can use 3 puff pastry sheets
Method:
  • Marinade the chicken in cornflour & sweet chill sauce , the sweet chill just coating the chicken .
    Marinade over night or 1 hour. Then cook the chicken until cooked in an oil fry pan .
  • In an large mixing bowl add cool chicken , shallots , nuts & mix together .
  • Lay out 3 sheets of filo pastry with melt butter on each sheets ( cut the pastry sheets in half ) add the chicken mixture & place some mango on top & roll into an package & seal with butter & brush some butter on top & sprinkling with sesame seeds. Do this 2 more times or until you have no chicken mixture left .
  • Puff Pastry 3 sheets pastry cut into half , add the chicken mixture then mango and butter on top & sesame seeds on top .
  • Place in hot oven 185 *C for 15 to 20 mins or until pastry is golden in colour.

Easy Savory Cheesy Bacon & Onion Quick Bread or Muffins

Cheesy Bacon & Onion Quick Bread or Muffins is amazing when you can have freshly baked at home.

1 cup diced bacon or ham
1 med onion diced
1 cup cheddar cheese
1 cup milk
1 egg
1 tablespoon vegetable oil
2 tablespoon fresh chive or garlic chives
hand full fresh parsley
1 tablespoon smoke paprika
1/4 cup sesame seeds
1/4 cup linseed
3 cup self-raising flour
1/2 cup Raw sugar
sesame seed sprinkle on top & grated cheese on top
METHOD:
  • Cook the bacon & onion in fry pan until cooked add about 3/4 of the bacon mixture , save the rest for top of the loaf or muffins Mixing Bowl , eggs, milk , vegetable oil .Whisk together all these ingredients. On top of the wet ingredients mixture sifted the flour add the seeds & paprika & fresh herbs , please don't over mix. Just fold in the flour using a s Silicone Spatula until mixture is wet .If you think the mixture to dry: hard to fold the flour in then add 1/4 cup of milk in & fold the milk in.
  • Pour into a grease loaf tin Sprinkle bacon & onion mixture & grated same cheese on top add same sesame seeds or muffin 12 cup Bake in moderate 180*C ( 350*F) oven for 1 1/4 hrs .Stand 5 mins before turning onto wire rack to cool Enjoy!

Roast Pork & Bacon Croquette

This Recipe Roast Pork & Bacon Croquette , taste scrumptious cheesy pork & bacon, I served the Croquettes with fresh garden salad .

1 cup left over of Roasted Pork
3 med Potato , cooked & mashed ( with some milk & butter )
1/2 cup diced bacon or ham
1 med onion diced
1 cup grated cheddar cheese
1/4 cup chopped parsley
1/2 cup corn kernels
3 teaspoon curry powder
Freshly ground salt & black pepper
Bread crumbs
oil to shallow fry
Method :
  • Cook the onions & Bacon off in an fry pan
  • Large mixing bowl add all ingredients mix well , roll in to sharp & roll in breadcrumbs
  • Place the croquettes in the refrigerate for 30 mins , then shallow fry until golden in colour.

METHOD:

  • Add in the food processor pumpkin, carrots, shallots & fresh herbs & blend add to a large Mixing Bowl , eggs, milk , vegetable oil .Whisk together all these ingredients. On top of the wet ingredients mixture sifted the flour add the seeds & paprika , please don't over mix. Just fold in the flour using a s Silicone Spatula until mixture is wet .If you think the mixture to dry: hard to fold the flour in then add 1/4 cup of milk in & fold the milk in.

4 chicken Breast
2 orange juice & zest
2 tblsp poppy seeds
salt & pepper
1 pkt stir fry vegetables
2 teaspoon sesame oil
3 tblsp sweet green chill with lime ( flavoured wok sauce )
served with rice
Method:


  • Heat fry pan with a dash of oil , Rub the chicken breast with orange zest & sprinkle with poppy seeds & salt & pepper. Cook the chicken breast until golden brown.

  • Place the stir fry ( frozen ) vegetables in microwave about 2 mins ,place in hot pan add sesame oil & vegetables & sauce . Cook until vegetables have heat through .

Nonstick cooking spray
1 Tablespoon Trans-fat-free soft tub margarine
25o g package marshmallows
1 cup rice bubbles
5 cup
1 cup crushed nuts
1/4 cup sesame seeds
min marshmallows or 100's & 1000's sprinkle on top
Method :
  • Cut an 8 - 8 inch baking pan with cooking spray
  • Melt the margarine in a large pot over low heat .
    Add the marshmallows & stir until completely melted.
    Remove the pan from the heat.
  • Add the rice cereal & flax-seed or sesame seeds, and stir until the rice bubbles is well coated with marshmallow. Press the mixture into the baking dish , sprinkle the 100's & 1ooo's on top & let cool befor cutting into squares.

Healthy Low Gi & Dairy Free Orange & Banana Quickbread or Muffins

This recipe Orange & Banana Quick bread or muffins , so light & healthy delight to eat.
This is my mummy favorite Orange & Banana Quickbread ,
It's so good for her be low Gi &  great for all the dairy free people out there .
This quick bread so fast & easy to make all you need is one big bowl & spoon takes about 15 minutes to put together , then place in oven .
I love the smell in my kitchen when I take the fresh baked Orange & Banana Quick bread or Muffins out of the oven.
3 ripe banana ,mashed
[about 1 cup]
3 orange juice [125ml] & zest
2 egg

1 teaspoon ginger
1 tblsp vegetable oil
1 cup orange
juice low in sugar
3 cup self-raising flour, sift

1/2 cup Low GI sugar

1/4 cup linseed's

sunflower seeds
METHOD: Mash the banana using a Potato masher in a large Mixing Bowl add ginger , eggs, juice & vegetable oil .
Whisk
together all these ingredients.
On top of the banana mixture sifted the flour add the linseeds, please don't over mix.
Just fold in the flour using a s Silicone Spatula until mixture is wet .If you think the mixture to dry: hard to fold the flour in then add 1/4 cup of juice in & fold the milk in.
Pour into a grease loaf tin Sprinkle with sunflower seeds or muffin 12 cup With the muffin sprinkle with cinnamon sugar.
Bake in moderate oven 180*C (350*F) for 1 1/4 hrs .Stand 5 mins before turning onto wire rack to cool Enjoy!
TIP: Have no ripe banana ? You can get 2nds banana at your fruit & vegetables store cost about $2.00

Wickedly Rich Chocolate & Hazelnut Mousse


This Wickedly Rich Chocolate & Hazelnut Mousse taste so naught but so nice & divine on your taste buds, I just love how the chocolate mousse just melts on your tongue.
This recipe hit the comfort zone of yummyness !!
When I eat this mousses I always just use a small spoon so the dessert last longer !!!And all time Classic chocolate mousse taste divine with the hazelnut just compliment the chocolate.

300g good- quality dark chocolate, chopped
30g unsalted butter
3 eggs, separated
500ml cream , whipped to soft peaks
Hazelnut speared

Topping : 250 ml Whipped cream
1 tablespoon hazelnut spread
1 pkts chocolate fingers biscuit
1/2 cup min marshmallow
100g grated chocolate
some blueberry or strawberry for garnish
Method :
  • To make mousse , melt the dark chocolate with butter in a double saucepan.
    ( alternatively, bring a small pan of water to a simmer, remove from heat & place a heatproof bowl over the pan, making sure you don't let the bottom of the bowl touch the water. Add the chocolate & butter to the bowl.)
  • When the water is hot remove the chocolate stirring until chocolate has melted add 2 tablsp of hazelnut spread .
  • Allow to cool slightly whisk egg yolks allow to cool. Fold in half the cream, beat the egg whites until soft peaks from & fold lightly into the mousse until well combined.Fold in the remaining cream to make a swirled pattern.
  • Spoon the mousse into nice glass, of your choice. Chill for several hours before serving.
  • Serving Whipped up cream add hazelnut spread , place piping bag & piping cream on the chocolate & Hazelnut Mouse add cut chocolate biscuits, min marshmallows, grated chocolate ,blueberries or strawberry.Or any of your favorites toppings

$250 Chocolate Cookies Recipe

I received this email from a friend of mine and thought it would be perfect to share with ya'll!
It reads as follows;
My daughter and I had just finished a salad at a Neiman-Marcus Cafe in
Dallas, and we decided to have a small dessert. Because both of us are such
cookie lovers, we decided to try the "Neiman-Marcus Cookie". It was so
excellent that I asked if they would give me the recipe. The waitress said
with a small frown, "I'm afraid not, but you can buy the recipe."
I asked how much, and she responded, "Only two fifty-it's a great deal!"
I agreed to that, and told her to just add it to my tab.
Thirty days later, I received my VISA statement, and the Neiman-Marcus
charge was $285.00! I looked again, and I remembered I had only spent
$9.95 for two salads and about $20.00 for a scarf. As I glanced at the
bottom of the statement, it said, "Cookie Recipe-$250.00". That was
outrageous! I called Neiman's Accounting Department and told them the
waitress said it was "two fifty", which clearly does not mean "two hundred
and fifty dollars" by any reasonable interpretation of the phrase.
Neiman-Marcus refused to budge. They would not refund my money because,
according to them, "What the waitress told you is not our problem. You have
already seen the recipe. We absolutely will not refund your money at this
point." I explained to the Accounting Department lady the criminal statutes
which govern fraud in the state of Texas. I threatened to report them to the
Better Business Bureau and the Texas Attorney General's office for engaging
in fraud. I was basically told, "Do what you want. Don't bother thinking of
how you can get even, and don't bother trying to get any of your money
back." I just said, "Okay, you folks got my $250, and now I'm going to have
$250 worth of fun." I told her that I was going to see to it that every
cookie lover in the United States with an e-mail account has a $250 cookie
recipe from Neiman-Marcus...for free. She replied, "I wish you wouldn't do
this." I said, "Well, perhaps you should have thought of that before you
ripped me off!" and slammed down the phone. So here it is! Please, please,
please pass it on to everyone you can possibly think of. I paid $250 for
this, and I don't want Neiman-Marcus to EVER make another penny off of this
recipe!

NEIMAN-MARCUS COOKIES (Recipe may be halved)
2 cups butter
24 oz. chocolate chips
4 cups flour
2 cups brown sugar
2 tsp. soda
1 tsp. salt
2 cups sugar
1 8 oz. Hershey Bar (grated)
5 cups blended oatmeal
4 eggs
2 tsp. baking powder
2 tsp. vanilla
3 cups chopped nuts (your choice)
Measure oatmeal, and blend in a blender to a fine powder. Cream the butter
and both sugars. Add eggs and vanilla, mix together with flour, oatmeal,
salt, baking powder, and soda. Add chocolate chips, Hershey Bar, and nuts.
Roll into balls, and place two inches apart on a cookie sheet. Bake for 10
minutes at 375 degrees. Makes 112 cookies.

185g unsalted butter , chopped or margarine
1 teaspoon vanilla essence
3/4 cup castor sugar
2 eggs
2 green apple, peeled & chopped
1/3 cup sultanas
1/4 teaspoon Cardamon
2 cups self-raising flour
1/3 cup orange juice
1/2 cup finely chopped walnuts
1/4 brown sugar, firmly packed
1 1/2 teaspoon cinnamon
Method :

  • Preheat oven to moderate 180*C / 360*F .Spray with canola a deep 20 cm round tin Cake stand
  • Place butter , essence, sugar & egg in food processor bowl .
    Using pulse action ,process for 1 minute or until mixture is light & creamy Add apples, & cardamom to bowl .
  • Process for 15 seconds ,add the juice & flour process 20 seconds or until apple are finely chopped & mixture is thick & almost smooth.
  • Spoon half the cake mixture into the prepare tin, sprinkle the sultanas on top of the cake, add the nut mixture on topped of the sultanas .
    Combine walnuts & brown sugar & cinnamon in a small bowl.

1 cup desiccated coconut
2 cup rolled oats
2 tblsp sesame seeds
1/4 cup sunflower seeds
1/4 cup pumpkin seeds
1/4 cup nuts of choice,almond, walnut, pecans
1/4 cup dried apricots
1/4 cup dates or figs
1/4 cup dried peaches or apple , paw paw
200g unsalted butter or margarine
1/4 cup honey
1/4 cup golden syrup
1 cup low-GI sugar
Method :
  • Line a tray with baking paper.Combine coconut,oats,seeds & nuts,then spread on an oven tray.
    Put under a hot grill & toast for 5mins until golden,stirring often.
    Remove nut mixture to a bowl & mix in dried fruit.
  • Put butter, Honey, golden syrup & sugar in a heavy-base pan over a medium heat. Cook , stirring constantly, for 8 mins until bubbles slow & caramel forms a soft ball when dropped in a cup of cold water.Stir caramel into muesli mixture.
  • Working quickly, press combine mixture into prepare tray Slice tray
    Lay a sheet of baking paper on top & press firmly with a flat tray to compress slice. Allow to cool then cut into pieces with an oil knife.Store muesli bar in an airtight container & eat within 7 days

This Dish is a classic combination of flavors from the Mediterranean.
Balsamic vinegar just finishes & adding different demesne to the dish.Complements the Mediterranean Roasted Lamb.

Mum Home Recipes
680g Small firm potatoes
680g pumpkin or sweet potatoes
2 red onions,cut into chunks
4 Rome tomatoes
25g butter
2 tblsp olive oil
8 garlic cloves,unpeeled
2 tblsp chopped rosemary
salt & freshly ground black pepper
2 tblsp balsamic vinegar
serves 4

  • METHOD : Preheat the oven to 230*C /450*F. Using Cutting Board & chef knive to prepare the vegetables, Peel & quarter the potatoes & pumpkin, rinse them well & pat thoroughly dry on kitchen paper.
    Place the butter & oil in a Rectangular Roaster tray& place in the oven to heat.
  • When the butter has melted & is foaming , add the potatoes ,pumpkin ,red onions ,garlic & rosemary.Toss well then spread out in the tray.

Cheesy & Poppy seeds Quickbread / Muffins

This Classic Recipe savoury Cheesy & Poppy seeds Quick bread is so tasty and scrumptious and all the flavours just compliment each other.
This quick loaf "Tastes great "toasted for breakfast & packed in the kids lunch box for school.

Enriches with goodness in this recipe. Great dipping in my salmon chowder!


1 cup zucchini grated
1 cup carrot grated
1/2 cup ricotta cheese
2 eggs
3 cup milk
1 teaspoon smoked paprika
1 teaspoon cumin ground
3 cup self-raise flour
1/2 cup caster sugar
1/4 cup poppy seeds
METHOD:
  • In a large Mixing Bowl add herbs & spice , eggs, milk or buttermilk, ricotta & vegetable oil .Whisk together all these ingredients. On top of the ricotta mixture sifted the flour add the poppy seeds, carrot & cheese please don't over mix. Just fold in the flour using a s Silicone Spatula until mixture is wet .If you think the mixture to dry: hard to fold the flour in then add 1/4 cup of milk in & fold the milk in.
  • Pour into a grease loaf tin Sprinkle with poppy seeds or muffin 12 cup Bake in moderate 180*C ( 350*F) oven for 1 1/4 hrs .Stand 5 mins before turning onto wire rack to cool Enjoy!
    TIP: Storage time 3 days Guaranteed the loaf will be eaten be then.

Banana & Cinnamon Quickbread Healthy but Nice

This healthy Quick and easy recipe can be Made into muffins or Quick bread .This cinnamon and banana loaf tasty great when cut thick slice's then toasted for breakfast. As well my children love take to school in there lunch box. "Guaranteed they eat the banana loaf or muffins

Humming Bird ,Cheese and poppy seeds and much more Quick breads !!


3 ripe banana ,mashed
[about 1 cup]
2 eggs

2 tablespoon cinnamon

1 1/2 cup milk or buttermilk

2 tablespoons vegetable oil

3 cup self-raising flour, sift

1/2 cup caster sugar

1/4 cup flax seeds

sunflower seeds
METHOD: Mash the banana using a Potato masher in a large Mixing Bowl add cinnamon , eggs, milk or buttermilk & vegetable oil .
Whisk
together all these ingredients.
On top of the banana mixture sifted the flour add the flax seeds, please don't over mix.
Just fold in the flour using a s Silicone Spatula until mixture is wet .If you think the mixture to dry: hard to fold the flour in then add 1/4 cup of milk in & fold the milk in.

Creamy Pumpkin Pasta bake with a twist

Bacon & Pumpkin Pasta BakeThis recipe I created for my family using left over pumpkin soup turning it into sauce to cover the pasta, coating it with a full rich rustic flavour.
The kids can't see all the vegetables in the sauce! Great? I think so!
My kids eat it all up without any complaints.

500ml pumpkin soup

250g ricotta cheese or can chick peas pureed

300g bacon - diced

2 tablespoon olive oil

3 shallots sliced

1/4 cup fresh basil

freshly ground pepper & salt

500g Spirals Pasta

Topping:

sprinkle Parmesan Cheese

1 cup cheddar cheese

freshly ground pepper & salt

2 cups fresh breadcrumbs

2 tablespoons butter

Sprinkle smoked paprika
Method:

  1. Cook the pasta as directed on the packet.
    In a saucepan heat oil add dice bacon cook until golden brown place in ovenproof dish, add Pumpkin soup, ricotta (or puree`d Chick peas), shallots, basil & season with salt & pepper and stir till combined, Fold through the prepared pasta.
  2. Topping - Put all ingredients into a bowl except Parmesan & paprika, Rub the butter through to reassemble breadcrumbs, place over pasta Classic Cheese Grater sprinkle over with Parmesan & paprika
    Place on in oven on 180'C cook for a 1/2 hour or until top is golden brown & heated through.
  3. Tip - The chick peas give the sauce extra creamy tasty with extra goodness & less fat too, just replace with the ricotta.
